Since we are big pancake fans in our home, I wanted to figure out how to eat our favorite breakfast while on a gluten-free and dairy-free diet. This is a feat since most pancake recipes call for both wheat flour and milk. However, I was on a quest to make gluten-free pancakes. The Oatmeal Pancake was born and it has soared to be one of the most popular recipes for kids since 2017.

Since I like to get a lot of protein in my diet, I decided to experiment to see if I could add collagen to these healthy pancakes. The result was a wonderfully tasty pancake that melts in your mouth.

These collagen pancakes are made with just a few simple ingredients – gluten-free oatmeal, almond milk, collagen protein, vanilla powder, eggs and baking powder. This collagen pancake recipe can be thrown together in a blender in less than 30 seconds.

How to make protein pancakes?

Recipe about 8 servings:

  • 1 dl collagen powder
  • 5 dl oatmeal
  • 5 dl almond milk
  • 2 eggs
  • 4 teaspoons baking powder
  • vanilla powder

1. Start with a blender. Everything is whipped up in a blender in less than 30 seconds. Start with liquid first (almond milk and eggs) and then add the solids (oats, collagen protein, baking powder + vanilla powder). Blend until the oatmeal is smooth.

2. Fry on medium-low heat. Pour butter or coconut fat into a frying pan. Flip the pancakes when bubbles start to form on the surface. Fry until they are cooked through.

3. Top with 100% real maple syrup and fresh berries, or top with almond butter or peanut butter for extra protein and healthy fats.
